I had tacos tonight ... and I made TACO SHELLS for my first time EVER!

Yeah, I was excited, because I wanted HARD SHELLS (i.e. corn tortillas) instead of soft shells (i.e. flour tortillas). Usually, I just buy a pack of Ortega shells , but I had a bunch of corn tortillas in my pantry for when I make enchiladas (which I love). So I decided to try making the taco shells myself.

It worked GREAT, except the timing that the recipe suggested (15 seconds per side, then curve the tortilla into a taco-like shape and do 15 seconds more on each side) was WAY WAY WAY too long ... I figured out by hard shell #3 that more like 25 seconds TOTAL made my hard shells like my favorite Mexican restaurant makes theirs.

So now I know for when I NEXT make tacos, which will likely be, you know ... tomorrow.

THEY WERE DELICIOUS!! Not QUITE as good as my favorite Mexican restaurant’s hard taco shells, but quite a bit less greasy, too.

So YUM is all I can say.

And of course I was busy EATING so I forgot to take pictures. Maybe next time ...

I love that TJ's canned eggplant and tomatoes. I bet it would work -- although this pizza had a unique smoky flavor from the eggplant. I have found somewhere -- maybe Wegmans -- a really good smoked mozarella that would give you the smoky flavor. And fresh spinach and roasted red peppers -- it was so delicious! It was called a Kurdish pizza.
