I'm going to make pasta with vegan pesto, mushrooms and goat cheese. I'm using pasta without gluten mixed with another one made of black beans. I had them before, they are pretty good. Will steam the mushrooms for a few minutes before. Mix all together and ...it's done!

P.S. The beans pasta and the vegan pesto are from Trader Joe's.

Another night of leftovers -- the Hungarian paprika sausage with carmelized sauerkraut and mashed potatoes. I didn't love the Hungarian sausage -- a bit too spicy and the paprika didn't go with the sauerkraut and the sausages are a little tough -- I prefer the softer and milder bratwurst. I also cooked some fresh buttered carrots and will have herbal tea and smoked almonds for dessert.

That's a good meatloaf recipe and the one I use as the basis for my meatloaf. Tons of onion makes it moist. I freestyle my own glaze usually using the leftover tomato paste, whole seed dijon, and maple syrup.

I went to the Italian market with the goal of picking something up, saw a dish with potatoes and thought, that looks good, I can do that. So we're having Shepherd's Pie and broccoli.

Leftover melange - I’m sautéing a few mushrooms with a small carrot and some garlic, then adding in chopped up cooked Italian sausage and leftover mushroom-beef spaghetti sauce. What is old is new again? I hope so.

Serving the sauce with penne and grated parm, plus a spinach/butter lettuce salad.

I bought some mahi mahi burgers from Trader Joes. I had one tonight with Russian dressing, lettuce and tomatoes on a croissant. It was actually really good.
