If i can drag myself to the market in time, we'll be having meatloaf made with beef and pork, angel hair pasta with shallots and chives, and caramelized onions. Probably broccoli again as the vegetable.
Tried a new recipe today ... it looked a tiny bit complicated so I was saving it for a weekend. It's based on this: https://www.recipetineats.com/chicke...-chicken-stew/ . I love Nagi's recipes (I recently made carnitas from one of her recipes and they were phenomenal!) and this one sounded wonderful. And it was!
It took a while for me to get through the recipe, but it's really NOT complicated (even though it looks like it is), and I suspect the next time I make it, it will go faster or more smoothly. I made only about 1/3 of the recipe -- I usually do that the first time I try a recipe so if I hate it, I won't have wasted too much food.
Was definitely NOT necessary this time! And, oh, the taste ... I sampled the sauce (LOL, well, OF COURSE I did! ) as it was cooking and thought, Oh wow, this is going to be good!

And here it is on my plate with mashed potatoes (it's actually traditional to put the chicken/sauce ON TOP of the mashed potatoes, but that sounded weird to me, so I didn't do it) ...
It was so, so, so good. As I wrote, I tasted the sauce and it was wonderful even BEFORE I added the cream (last step), so I may try this again without the cream (making it a little less decadent but still, I think, quite delicious). Tonight I ate the thigh and a couple of bites of the leg on the leg quarter, but I have a LOT left for tomorrow and, LOL, I'm already looking forward to it!
The sauce tasted great with the mashed potatoes (as gravy) but I think I may next try it with plain old rice as a base and have it all in a bowl (easy to take to campus for lunch!). I will also add more veggies, like spinach (wanted to do that today to add some lovely color, but I forgot, and I even forgot the parsley at the end, oh well ).
Anyone who's looking for a new chicken recipe -- try this! The ingredients are pretty simple -- butter, onions, mushrooms, garlic, white cooking wine and/or chicken stock or broth, a bit of flour to thicken it, and the chicken of course. I had to make some substitutions (e.g., I usually have fresh mushrooms but didn't today so I used canned and they were still excellent) and it was fine.
Finally got the chance to celebrate Mr C's birthday. BJ's Brewhouse. Appetizer: Boneless chicken with a root beer glaze and some celery Ickes. He had one of his fave dishes with jaleapeño peppers added. I had the Atlantic salmon with broccoli and rice pilaf, glass of Pinot Grigio & water. Plenty leftover for another day.
