A heatwave and it will get hot and humid......

Tonight at our Stammtisch under the Maple tree we will enjoy German potato salad,baked cod and cucumber salad.To drink lemon water. For dessert grapefruit slices.

English cucumber salad......

dill

Tonight we are having "week in review". I have so many leftovers that it doesn't make sense to cook. We have brisket, ribs, sausage, potato salad, fajitas rice and beans, Mac and cheese, squash casserole, and apple pie for dessert!

If it's Wednesday, it's soup day (although not for much longer!! ). Leftover Progresso creamy chicken noodle soup with lots of veggies added. It was fine, but, you know, it's canned soup.

TOMORROW I will be making smoky harissa chicken for the first time in a few months (I got I think 5 servings out of that meal -- it froze beautifully). I suspect I will like tomorrow's dinner more than I liked tonight's, LOL!

Breaded eggplant - prepared from frozen and pan-fried, layered with provolone cheese and tomato/basil sauce... spinach/spring mix/mushrooms/balsamic dressing. A 20-minute dinner and not bad at all.
