Simple dinner - Stouffer's Pub Burger meal with a fresh salad with French vinagrette as a veg.

Made about a 1/2 recipe of "Old Fashioned Apple Crisp" from Kate's Butter website for dessert. This would be even better with some French Vanilla ice cream, but I am trying not to go too far!

I used 1.5 large Fuji apples (a little more than 2c, maybe 3c?), cored, skin-on and cut in chunks and sprinkled with a little fresh lemon juice, 1/4c oatmeal, 1/4c flour, 1/4c turbinado sugar, 1/3 stick butter, and cinnamon and ginger for the crumble topping. That's one of two generous servings in the picture below.

This kind of thing is a good deal simpler to make and a bit lighter than a pie, but still tastes very good!

Made an Asian Bowl with chicken, pearled couscous, peas, corn, edamame, onion, avocado and tomatoes with a spicy ginger sauce❗️

Looks tasty and healthy - just looking at avocados always makes me hungry :-)

Last night was fairly unhealthy (ribs with BBQ sauce) so we had to tone it down tonight and I do love avocados and use them in shakes a few times each week.
