Żurek. Made out of fermented rye and cooked with garlic, sausage and bacon. Served with hard boiled egg and boiled potatoes.
The soup is hardy enough to suffice as a main dish. It was served in an edible bread bowl.

That won't be the last time I make that eggplant - you panfry them 2 minutes per side and they come out nicely browned and tasty, I just used a nice big pan so I could fry all 3 slices at once, and stacked them sauce/eggplant/sauce/cheese and then warmed the whole stack in the microwave 1 min to melt the cheese... very easy, it was all done in 10 minutes and tasted nice. You could get fancier with some mix of freshly grated cheeses, but I just used sliced aged provolone from the deli - it's an Italian cheese and the slices already have the right shape and thickness, just throw one on top of each fried cutlet after spooning on some tomato sauce - no grating, thinking or adjusting needed, it's just automatic :-).

I just noticed these the last time I was in the supermarket and picked them up - you get 6 breaded eggplant slices (1lb), and it was very reasonable at the Market Basket anyways.

Happy weekend, everyone!
Weekend greetings All!

~ Karen_in_NH, I hate when the corn on the cob isn’t quite right either. Hubby found a bag of the seafood boil in the store yesterday and wants that for Sunday. We’ve had it twice so far. It comes with corn on the cob. The 1st time it was great. The 2nd time, not so much. I hated how mushy the corn turned out. How can we get it so right the 1st time?

~ Outdoor Lover, eggplant cutlets - thanks for posting that pic. Now I’m going to have to look for those!

I agree with other posters that say meals to include desserts (of course ) gives us ideas for planning our future meals.
