More fun with the air fryer I made a few Antipasto Egg Rolls. Except they're flat, not rolled. They have provolone cheese, ham, pepperoni, mozzarella cheese (you can never have too little cheese) and golden peperoncini inside. I'll have them with a side dish of pizza sauce for dipping. I never made them before but when I saw the recipe online, they looked so good, I knew I had to give it a go.

Those look great! But I assume you meant you can never have too MUCH cheese, right? (That's what I would have meant, LOL! Which is kind of weird because I didn't like cheese at all when I was a kid ... now I love it!)
Tonight I had another leftover-from-frozen meal, this one lamb and veggies with apricot-coriander sauce. I froze it with cooked riced cauliflower and it was fine with this meal (so I still can't figure out why it wasn't with the frozen Hunan beef meal ).
Oh, I had a slice of Joseph's oat bran/flax/whole wheat pita bread with it -- I eat it like naan -- it is great with my Middle Eastern sauces!
That looks delicious too, Karen. The apricot-coriander sauce sounds interesting. I'm trying to imagine what that might taste like. A most unusual blend of flavors. Yes, you can never have too much cheese. Be careful, though. The older you get, the less of it you can eat without it giving you, ahem, digestive problems.
We had German pancakes topped with Greek yogurt,lettuce, smoked salmon,thin sliced red Bell peppers,more lettuce and rolled up to eat.For dessert 1/2 a pink grapefruit.
Tonight husband cooking sauteed chicken breast with butter, garlic and wine sauce, green salad on side, not sure what else, too tired to get up and look lol (it was white corn on cob with yummy marinade cooked on grill)
Last night a veggie quiche pulled from freezer then I made stir fry veggies with garlic, soy and ginger sauce. Can never have too many veggies.
Busy day again tomorrow so probably good raviolis from local market with mushroom sauce by me and appetizer dumplings from LIDL. LIDL has about 5 different dumpling makers so I bought one bag from each and this one is the winner so far. Have to make a nice dipping sauce to go with.

Tuscan chicken sausage with sauteed yellow and red peppers, another baked potatoe with butter, salt and pepper (bought a big bag on Sunday for $2.49 -- eating them for calcium and other vitamins plus they are very filling) and a nice green salad with a lovely ripe half avacado -- used my homemade lemon tahini sauce for dressing. No wine -- no dessert -- pants are getting tight.
