I'm making crawfish enchiladas tonight. I don't have a game plan other than that - maybe Tex-Mex rice and a salad.

I sauteed some newly bought Aloha Chicken Sausages with red peppers and onions -- it's basically a ginger, garlic and pineapple spiced sausage. Was going to serve it on some toasted French bread with a chopped romaine, orange and avocado salad. Herbal tea and a ripe mango for dessert.

Tonight's experiment was pulled pork Marsala ... Somewhat to my surprise, it was really delicious! I ended up making 3 more portions to freeze; I will probably try 1 next week just to see how well it freezes. (I've been very lucky so far! )

1 1/2 Hot dogs and side bowl of chili. Finished off my Coca Cola. Also, water.

One of those Snickers bars that’s shaped like half an egg.

Tonight was chicken sausage links, mashed potatoes and sauteed red cabbage, onions, feta, apple and walnuts (chef Deborah Madison recipe). Will be making this again.
