I sauteed some newly bought Aloha Chicken Sausages with red peppers and onions -- it's basically a ginger, garlic and pineapple spiced sausage. Was going to serve it on some toasted French bread with a chopped romaine, orange and avocado salad. Herbal tea and a ripe mango for dessert.
Elnina has had so many amazing meals lately! I haven't eaten out in ages but I am really enjoying cooking new meals at home.
Tonight's experiment was pulled pork Marsala ... I'd made about 3 pounds of pulled pork (unseasoned, so I could flavor it lots of different ways) out of a ~5-pound butt roast last week, so I figured I'd use that even though I'd never heard of "pork Marsala" (although apparently there IS such a thing!). I had a very, very, very old boxed meal kit (so old they haven't made it in years ) with linguine pasta, Marsala sauce seasoning, Marsala wine, and seasoned flour (didn't really need that since the pork was already cooked, but I used a bit). Oh, I did look up Marsala wine to make sure it is fine to use WAY WAY WAY after its "best by" date, and it is (it loses some flavor over the years but is still fine to use), so I figured I'd try it with just 2 ounces of pork plus some freshly-cooked onions and mushrooms.
Somewhat to my surprise, it was really delicious! I ended up making 3 more portions to freeze; I will probably try 1 next week just to see how well it freezes. (I've been very lucky so far! )
Tonight was chicken sausage links, mashed potatoes and sauteed red cabbage, onions, feta, apple and walnuts (chef Deborah Madison recipe). Will be making this again.
