Saved my corned beef for today -- have it in the oven baking with onions and carrots -- will add the cabbage in another 2 hours. Going to make chunky mashed potatoes with chives to accompany the meal. I will save enough for a couple of good sandwiches and then freeze the rest -- minus the mashed of course. They don't freeze well. I have a really good Trader Joes giant chocolate bar -- milk chocolate with crushed pretzels, caramel and toffee -- and a couple of squares with some herbal tea will be dessert. It's the weekend!

Happy Saturday, all! Tonight I made something I hadn't cooked for awhile -- chicken tagine. Of course I added a ton of veggies (carrots, mini sweet peppers, red onion, sweet onion, diced tomatoes, zucchini, snow peas, mushrooms, plus spinach at the very end for more color) plus 1 preserved lemon (including the rind). Had it over cauliflower rice (LOL, yeah, another veggie! ) with a small slice of pita bread.

It was really good -- I should make it more often! But now I have 3 more portions ready to go into the freezer.
