Being Irish (and Finnish), corned beef is #1 choice, although someone just mentioned ribs and those sound mighty tempting. I still have time. I haven't had breakfast yet

Alas, I don't like corned beef, so no St. Paddy's Day feast for me today ... just soup again. I did just have a big butter lettuce/spinach salad and that was delicious -- added carrots, onions, snow peas, grape tomatoes, and ACTUAL seedless red grapes cut in half, plus a bit of reduced-fat feta cheese. PLUS half an avocado -- IT WAS AT THE ABSOLUTELY PERFECT STAGE OF RIPENESS*!!

* I'm yelling because I am excited because that is SO FREAKIN' RARE, lol! I bought it VERY HARD and today it felt VERY SOFT and I thought it was going to be full of those lovely black squiggly lines. But it was PERFECT!! I am going to add some to my soup later today (Campbell's Healthy Request beef with vegetables -- not a favorite, but the avocado should help! ).

Hurray! You won the avocado lotto!

I'm 1/2 Irish so a St. Paddy's Day meal is in order. I'm making Guinness beef stew and we'll have green beans and maybe a salad. I'm making 1/2 of the recipe which calls for an American pint of Guinness - my husband bought a can of Guinness which is closer to 19 oz. so I'll be drinking' a wee bit o that I'm sure!

Cauliflower Gnocchi, with roasted potatoes, beets, butternut squash, brussel sprouts, and italian sausage. Topped with homemade pesto.

Hubby and I are both sick but he has corned beef in the oven. I also see potatoes and cabbage on the counter, but the soda bread that was made this morning is already 3/4 gone. What can I say, you crave the carbs when you're sick. I'm also craving the Irish whiskey in the pantry but may put that off and go with a cold beer for my throat instead.

We got back too late to put out meal together so we’re swapping nights around. Usual pizza.
We’ll celebrate our St Patrick’s Day tomorrow instead. I think hubby still had a bottle of Guinness for tonight. He may have a 6 pack.
