I made tacos tonight. I added a casserole, refried beans, and rice with tomatoes and peppers. It was pretty good.

Marinated some Aldi lamb chops in an olive oil/pepper/Italian seasoning marinade. Air-fried them with corn on the cob.

They were $6.99/lb., and were accordingly tough.

For me tonight, a much more pedestrian dinner ... soup again. But it was also a dessert day so I got 4 Famous Amos chocolate chip cookies, the tiny original ones. They were as good as ever.
I love soup. I love cookies. That's an amazing dinner to me.

My son and I finally managed to cook the St. Paddy's day dinner. It was great. There's quite a bit of corned beef, cabbage, potatoes, and carrots left over. Yay. Meals which I don't have to cook.
