Angel hair pasta with shrimp and bay scallops in a lemon sauce. That was inspired by current posts.

Dessert was chocolate banana muffins from a friend. Handy!

Last night I made a vegetable green curry over jasmine rice. I used green beans, carrot, celery, broccoli, onion, and my fave, snow peas. Sprinkled the top of each serving with scallions and slivered almonds.

Tonight we had bacon, avocado, and tomato sandwiches on seed bread with pickle spears and pickle flavored potato chips.

We are expecting a serious snowstorm, snow shovels are on standby,cross country skies are waxed and a big pot of mixed bean soup is slow cooking while bread is rising.

Tonight leftover lentil patties with bean soup.To drink lassi.For dessert 1/2 a red grapefruit.

Dark and rainy today in Charlotte NC so planning dinner as:
Mushroom and butternut squash soup, cheese ravioli with lemon garlic sauce
Pepperidge Farms apple turnover for dessert

Last night:
Chicken breast in wine and garlic sauce on rice pasta and pesto
Sauteed butternut squash, sliced carrots and onions
Vanilla pudding tarts with whipped cream

Roasting some chicken thighs, baked potato & a broccoli & cauliflower mix. Might add some raw sauerkraut to the plate.

Stay safe and warm, Alm! We got hammered on Sunday night into Monday (about a foot of snow -- took me just under 2 hours to snow-blow with my little electric snow-blower) but our forecast for tonight has changed from about 8" more to just 2-3" of snow -- which I am fine with!

Tonight, I'm back to soup, although I'm trying a new one, chicken with dumplings. I will add avocado to it so I don't waste the 2 I have left. I hate cutting them open only to see little black lines through the green flesh ...
