I went simple today and cooked 3-1/2 pounds of pork loin back ribs (that's what the label said ) in my slow cooker with about 3/4 cup of Sweet Baby Ray's barbecue sauce. Seven hours later, my house smelled great and I had also finished cooking all my veggies! Tonight's stir-fry was carrots, mini sweet peppers, onions, grape tomatoes, zucchini, and mushrooms, and I also air-fried asparagus for the first time (it turned out great -- I saved some to add to tomorrow morning's breakfast scramble ). Oh, and a tiny bit of avocado ... alas, the rest of it was bad.
I ended up with 32 ounces of meat off the ribs. They fell off the bones cleanly -- all I had to do was use a fork. They were SO good and didn't need any other seasoning. The veggies were fantastic too. And I ended up with 28 ounces of leftover meat -- I froze 3 bags of 7 ounces each and left the 4th out because I will likely have leftover ribs in my breakfast scrambles over the next several days! YUM!!
All in all, one of my favorite dinners lately -- I usually like what I cook but I'm having soup 3 days a week these days and I'm pretty bored with that. Another couple of months of that ...
