Yesterday was a beautiful day here in MI. So I grilled up some ribeye's, along with some caramelized onions, and mushrooms, served with baked sweet potato and a cucumber/radish salad with a lemon olive oil dressing.
I lazed today at a beach club and finished it off with coconut shrimp and a reckless amount of guacamole and totopos.
They served the shrimp with a chipotle sauce which I didn't think was a good choice but better than that too-sweet sauce you often get in the States. So I just used a squeeze of lime which was perfect.
I have yet to taste a Mexican guac as good as the recipe a Tex-Mex neighbor gave to me back in our Fort Lewis Days.
Tonight will be at Pappadeaux with mom and my brother (who's in town this week). Getting some grilled redfish with dirty rice and sauteed spinach. To wash it all down, it's red wine and unsweet iced tea.
Tonight's dinner was pasta al cavolfiore or spaghetti with cauliflower. It's an old recipe from the Moosewood Cafe Cookbook. Served with a tossed salad, Italian bread and a bottle of merlot. Dessert was two of Mrs B's oatmeal chocolate chip cookies.
Leftover plate of spaghetti and a garlic buttered slice of ciabatta bread. Lemon iced tea.
