Also, something else that could help you pinpoint an area(s), is to use the Maps on the city-data website or the NY Times 2005-2009 ACS census map which can show the percentage of same sex households in a census tract. Some towns have a higher percentage than others. According to the NY Times map, it appears that the census tract that includes a portion of Glenmont and Selkirk, south of Albany, has the highest percentage for a non-urban census tract. Only census tract 59 in the city of Rochester and census tract 1702 in the city of Syracuse have a higher percentage of same sex households in Upstate NY according to that map information. I believe that map is based off of estimates and may have some other information effecting the numbers, but that is what it shows.
Yes. I've played around with that handy little device many times.
Is there a reason you are not considering Burlington, VT? Has everything on your list. Beautiful, liberal, lots going on. Lake Champlain, the Green Mountains. Great local music scene. Great restaurants serving locally grown foods. Awesome craft beers. The only downside could be jobs. Not a lot of high paying jobs here and for the ones available there can be good competition.
If I were you I'd consider a visit on your trip!
In New York if I were you I would be sure to check out Saratoga Springs and I also echo all the recommendations for Ithaca.
To answer Scorpio, YES!!! I love classical music. I play classical guitar.
To answer CKH, my favorite genres are instrumental, classical, music scores like those of Ennio Morricone and Klaus Doldinger, Celtic, rock, classic rock, and select artists like Celine Dion, Enya, Metallica, The Beatles, etc, etc, etc...
I could go on and on and on about the music that I like..but I won't torture y'all.

I think the main reason we weren't considering Vermont had to due with taxes, land prices/availability, and job availability. We are definitely looking into Ithaca.
