It's looking like Bachelor Son might finally be organized to move into his new apartment. So I've been making a few extra things for him to take along so he'll have a couple of meals while he's settling in.

Italian sauce and meat, zucchini bread and brownies, cole slaw and today got out three pounds of ground meat to make a tater tot casserole for us and one to send along.

Can't get that big bag of tater tots out of the freezer without thinking, "Hey Napoleon, gimme some of your tots."

Tried a new sauce with chicken -- it had gone great with pork tenderloin so I figured it would go well with chicken too. It's very simple -- 1 tbsp. apricot preserves, 1 tsp. mustard (I used stone-ground dijon mustard), a bit of minced garlic, a few shakes of the big thyme spice jar, and today I added about a tablespoon of chicken broth to "stretch" the sauce as I always want more!

It was SO GOOD!!



I had it with stir-fried veggies, although I desperately need to go buy more produce so my pile wasn't as big as I wanted it to be! I had a bit of avocado left that was edible and tasted wonderful with the chicken, sauce, and veggies.

After a very long bike ride everyone worked up an appetite......

For tonight a quick,yet delicious dinner...
I will make turmeric chicken breast with shoestring red Bell peppers. Sautéing onions and red Bell pepper slices in butter,then adding turmeric,black pepper and salt.Stir and add chicken breast pieces and let gently cook until chicken is tender.Served with steamed broccoli and baby white potatoes with peel on.To drink India pale ale.For dessert rice pudding with whipping cream in it,a shot of Cointreau and strawberry slices.

Karen in NH...that sauce sounds like a keeper! I love how apricot jam adds so much flavor to things.
Almra as always your dinner sounds lovely! If your weather was as lovely as ours it was a perfect day for a bike ride.

We our up in The Berkshires for the holiday weekend. It really is so lovely here. I will say some times it can get a little, I don't know la dee da. So we went out to just a comfortable place for burgers tonight. The burgers were huge and delicious! https://theheritagetavern.com/
Here is my burger with American cheese, lettuce, tomatoes, onions and there are jalapenos under the patty. The fries were Cajun and incredible. This was so much better then it looks! I had a Smithwicks to drink.
