I think Jeff Buckley did the best cover of that song.
I liked his version too, in fact, it's the first version I heard. It's hard to compare them. To me Buckley's version has a more haunting quality to it, which I like, but Lang sings it with such powerful energy and emotion. She just blew me away when I first heard her sing it.
Personally, I like Shinedown's cover of "Simple Man" better than the original by Lynyrd Skynyrd. And of all the covers of "Black Betty," Spiderbait does it best of all. (Their version ROCKS!)
I also like the way Limp Bizkit butchered the hell out of "Faith." It's like two minutes into the song, they just said "**** this" and just went over the top with the turntable scratching and the screaming vocals.
When she plays live, she tends to sometimes combine two songs together without breaks so, that's what happened in this recording and one of the best, I think. Although I did like Dylan's KoHD to begin with, however Cat Power does a better job singing Oh Sister.
I'm going to go for more controversial waters than I have, but I often seem to like covers of Joni Mitchell's songs more than her originals. (With the exception of "Circle Game", I like how she sings it, and maybe one other) Here's one possibly weird example.
The song is very much, as I recall, about Joni Mitchell's life. There's a vulnerability to her singing it that is genuinely moving and Mitchell is Canadian, which matters because to me this is a very "Canadian" song. (Mention of "O Canada", the North Star, etc) So any cover might not make sense and if I was to do a cover Diana Krall's, a fellow Canadian, would likely make more sense.
However Mitchell's voice in this one, despite calling it vulnerable and moving, somehow grates on me. So I tend to prefer covers of it, including Krall's. I went with this rather than Krall partly for sentimental reasons. I knew this one first, when I was teen. However I guess I also think that Krall maybe makes it a tad too "nightclub" or something.
