roasted chicken with a dijon herb rub, homemade applesauce, steamed broccoli with lemon butter, mashed potatoes. Dancing in the kitchen instead of dessert to work off all the calories.
Tonight creamed yam,carrot,celery coconut soup served with garlic butter naan.For dessert 1/2 a pink grapefruit.
sauté onion,ginger and garlic in olive oil
add turmeric,garam masala (or curry powder)
then add diced carrots,celery and yam
add vegetable broth or water
bring to a boil,then simmer and cover until vegetable is soft
add coconut milk
then use immersion blender and flavor with salt/black pepper
for garnish a sprinkle of coconut flakes and cinnamon
I had a couple pieces of air fried chicken with blue cheese dressing for dipping, Basmati rice and the rest of my apple cider from our stop at the local Farmers Market.
A couple of little steaks & beef liver w/ salad! (I very rarely get liver.)
