Glad the rain finally stopped. Almost looks like the sun is trying to make an appearance.

Quickly scanning this page to see what others are having. Never tried a Mexican lasagna. Grilled salmon with lemon butter sauce = yum 2

Alm, I used to bake banana nut bread and other goodies and send to hubby when he was stationed overseas. Hopefully he shared some of that but he won't say/admit anything.

Roasted Chicken, a sweet potato, broccoli & air fried mushrooms❗️ The air fryer does a fabulous job of cooking mushrooms, much better than sautéing them in a skillet, IMO.

I was thinking the same thing as Lubby! I LOVE mushrooms but have only ever cooked them on the stovetop. It never would have occurred to me to cook them in my air fryer so I will try that!

Anyway, tonight I had comfort food ... a baked chicken thigh (with Tone's rosemary-garlic seasoning) with stuffing (must admit it was Stovetop Savory Herb -- I had it for the first time this week and I really liked it) and a torn-off piece of store-bought rosemary-garlic bread heated up in the oven ...



I cooked the chicken in my oven for 35 minutes, but for the last 5 minutes I put it in my air fryer so the skin would get really crispy (for some reason even when I use the convection setting on my regular oven, the chicken skin doesn't get crispy -- seems like it SHOULD, but it doesn't ). It really WAS great comfort food. I cooked 3 thighs so I have enough for 2 more meals ... I suspect I will have a yummy lunch tomorrow.
