Tonight, I'm making Shepherd's Pie with mixed vegetables, hamburger, onions, cream of mushroom soup and Lipton Beefy Onion soup powder. Homemade mashed potatoes for the top - My 2 youngest daughters will be here to see their grandma who is in Hospice. One lives in AZ the other in NY.
It's baking in the oven now in a Dutch oven... 3 chicken drumsticks, homemade stuffing, mix of new & Russett potatoes. I'll have it with spinach & a small mixed salad.
I tried something new, swordfish. Used a very simple recipe (I wouldn't even call it a recipe -- more like heating instructions) and added a topping of pico de gallo ...

Had the fish with lots of veggies thanks to a Hannaford trip this morning.
I like the swordfish but it was more mild than I expected (and just a tad bland). The pico de gallo and avocado pieces helped for sure, and my veggies were yummy as usual. Had the meal with Clear American peach sparkling water, one of my favorites.
I saved a couple of ounces of the fish to have in my breakfast scrambles this weekend -- I expect it will taste great in those! I may try a bite of it (outside the scrambles) with sweet chili sauce -- that was another recipe I saw online and I expect I would like it that way because I love sweet chili sauce.

I am going to go get a green chile cheeseburger and onion rings from my favorite local mom and pop burger place. I will have my usual glass of unsweetened iced tea to go with it.
