We’re getting Jersey Mike’s steak and cheese with grilled onions and fresh banana peppers. They’re really good - they get their rolls from Philly. I’ll pick up a big bag of reduced sodium Lays chips and try not to eat too many of them. Root beer to drink.

It's a HelloFresh tonigh, cheesy chicken and carrots over cauliflower rice. I am not a fan of cauliflower rice, but thought I would give it another go. I'll probably add some zucchini, green beans and mushrooms.

Last night I had a tostada bowl ...



... and it was so good I may have another for dinner tonight! Had to use butter lettuce and spinach instead of my usual iceberg lettuce but that was fine (I should have known it would be).

Haven't had Mexican too often in the past year (was taking my time losing some I-am-getting-too-lazy-for-my-own-good weight) so it's nice to enjoy it again.


Happy weekend, everyone! It has been GORGEOUS here in the boonies of southwestern New Hampshire -- 70s, sunny, and very low humidity. Looks like we've got more of the same tomorrow, yay!
