Goodness, another clean out the fridge night. He's getting the last of the Stouffers meatloaf with mashed potatoes and peas, and I've got a leftover cold roasted chicken thigh. How exciting!

I tried this recipe recently but added cayenne pepper. It was really tasty and we both commented that it would be just as good with chicken instead of beef. I think it would bake well, too, if you don’t want to stir fry.
