Tonight, I've decided I'm starting my weekend at La Hacienda Ranch in nearby Colleyville, TX, for some cheese enchiladas, diced fajita steak, pico de gallo, queso, chips, rice, and refrieds. They were washed down with unsweet iced tea.

Default SO MUCH FOOD PORN ON THIS PAGE, lol!

Oh my gosh, SO MUCH FOOD PORN ON THIS PAGE (I have my pages set for 20 posts so I can see a bunch of photos!). Mine doesn't add much but here it is anyway ...



That's just Shake & Bake (always comfort food for me ) on trimmed, diced chicken thigh (5 ounces although it looks like more -- the chicken plumps up when cooked, which only takes about 5 minutes!) plus lots of veggies -- carrots, onions, mini sweet peppers, tomatoes, asparagus, mushrooms, and sugar snap peas. I cut the asparagus pieces in half and cooked them with different timing, i.e. the bottoms got about 5 more minutes than the tops, and that made a huge difference -- they were wonderful! Well, ALL the veggies were, and the chicken too. YUM.

Mea culpa! My rib eye turned out to be a big home smoked ham steak. With garden heat, onions, garlic chives and cream and fettuccini - heaven!

Ordered takeout Chinese food tonight:: Chinese style chicken salad, beef & broccoli, Chinese style BBQ pork (Char Siu), and chicken chow mein. Michelob Ultra beer to drink.
