We had a whole wheat crusted pizza with sausage, onion, garlic, zucchini, green pepper, and tomato pizza on the pizza steel. Also a tossed salad and zinfandel wine to drink.
Love the combination of egg, green bell pepper, water chestnuts, peas, mushrooms, shrimp, and the savory broth that rounds out this dish at my local Chinese restaurant.
I had salmon left over from yesterday so I made a Lemon Dill pasta salad, with shells. I added lightly steamed asparagus tips, snow peas, and shredded carrots, capers and a light, but creamy dressing.
I served it on a bed of bib lettuce. I used what I had on hand, but this salad would be good with multicolored sweet peppers, grape tomatoes, green onions, cucumbers, radishes - use your imagination.
