I found a container of crawfish etouffee in the freezer. I’m going to serve it over a small piece of grouper we bought at the coast and will probably make either rice or garlic bread (but not both). I’ll also make a garden salad.

DH wanted Mexican food, but I was not in the mood for tomato sauce, so I looked in my old recipe box for this -

Spinach Enchiladas with three cheese and Verde sauce. Mexican chopped salad - Romaine, bib, and red leaf lettuce, sliced tomatoes, sliced avocado, fresh grilled sweet corn and homemade lime cilantro dressing.

Peach sangria to drink.
