What’s for Dinner

I'm leaning towards a barely/wild rice pilaf with cabbage/carrots/celery/roasted sweet potato, top with fresh herbs, toasted nuts and a fried or poached egg.

SO brough chicken breast with bone and skin home. I hear the grill calling:>) Big salad with chopped apples added. His favorite yoghurt/cream/dill horse radish dressing and a slice of foccaccia.

Tonight at the Case abode: Grilled chicken salad with ranch dressing and bacon bits.

Tried to turn tuna fish salad into tuna cakes. Floppy and smushy. Still tasted ok. Side Mac and cheese.
Iced tea.

Dessert: Finished off my slice of cake with a scoop of ice cream. Good combo.

Hamburger steak with grilled onions, corn fritters and some salad veggies. I’m also making a pot of Anasazi beans in case DH wants more. I had a big Mexican lunch with my neighbors so no more beans for me.

My darling daughter is both a picky eater and a pasta connoisseur. Tonight’s pick is rigatoni. She will have the usual butter, parm, salt and pepper treatment.

Her father and I will enjoy room temp rigatoni tossed with pesto, chopped tomatoes, and toasted walnuts. And parmesan, salt, and pepper, of course!
