What’s for Dinner

I'm going to have a couple of slices of the Pacific Rim pizza I had from lunch. I'm getting 4 meals from one pizza. Absolutely the best pizza I've ever had.

I am going to cook some large shrimp with creole seasoning. I am also making a pasta & artichoke salad. Good for a warm evening.

Well, it's all about the bounty of the gardens tonight.

Homemade hummus and pita
raw carrots
corn on the cob
beets

And two different kinds of rhubarb cake. Have to get into that patch before summer takes any more toll.

One is a simple down-home depression era recipe that I dress up with a dash of balsamic vinegar. The other is a rhubarb walnut upside down cake. A choice of each and one to the neighbor and then one of them will go into the freezer.

Lazy night, quesadillas, light on cheese,heavy on veggies: red peppers, mushrooms, banana peppers, pickled onions, green onions, tomatoes and cilantro, salsa.

BLTs and corn on the cob. Strawberries on pound cake with whipped cream & caramel sauce for dessert.

Cleaning out the pantry before moving. Tonight’s dinner will be green chili and sautéed zucchini over rice noodles. To be enjoyed with Soju while watching the finale of our kdrama.
