I have a bunch of leftovers -- one extra thick pork chop is the main ingredient. I sliced the meat super thin and am going to sautee in some barbecue sauce, a gigantic baked sweet potato, some applesauce and I will make a fresh salad. Not terribly exciting and is actually enough for 2 complete meals. Getting old and having a smaller appetite has it's up sides, I guess.
Also today I am continuing my pandemic hoarding "clean-up" so I made a cherry pie with some of the excess flour I bought as well as 3 cans of expensive pitted cherries. That will be the star of the meal.
I just finished my last from-frozen portion of the chicken with smoky harissa sauce with veggies. I made a big pan of it with 5 bone-in, skin-removed thighs and 1 jar of Al'Fez sauce and LOTS of veggies way back on January 5th -- and it froze BEAUTIFULLY. Five minutes in the microwave and it's just as good as it was on the first day.
I added half a cup of cooked riced cauliflower to it in the last couple of minutes of nuking, plus had a slice of Joseph's oat bran/flax/whole wheat pita bread (also from frozen).
It's time to cook some more meat in that sauce, LOL! I might try lamb with it next. Or beef. Or even pork! I'll go crazy!
Tonight I made red pepper jam pork chops with garlic lime broccoli and scallion rice.
I can't rep you KareninNH but I am going to look for that sauce. It sounds good. Did you pick it up at the local grocery store?
