Last night I was determined to fix a nice meal for my family. Of course I had to have some help from my girls but one was in a foul mood. We had mashed potatoes and Salisbury steak with mushroom gravy.
This simple meal took almost 3 hours of prep and we didn't eat until 8 p.m.
First the daughter who arranged the kitchen was away so Mary and I had to search high and low (me low in the wheelchair) for the ingredients. She peeled the potatoes and helped me make the patties. I had a hard time convincing her they should not look like hamburgers. I have never even seen the stove so, even though I could get the wheelchair relatively close, I was eye level with the flame and could not see the dials. As I tried to regulate the flame I ended up turning things completely off without knowing it. It's a wonder the potatoes even cooked! The foul mood daughter was very impatient and rude with me and I lost my temper and said very loudly 'Well, you try cooking a meal in a wheelchair in a strange kitchen" She huffed away. This experience has taught me a whole new respect for people permanently in a wheelchair. It must be every day full of difficult challenges.
Tonight we will have frozen pot pies. Today DH went to the store and bought frozen meals cause I told him it just wasn't worth the hassle and late dinner.
It's my birthday and it's a big, bad, milestone birthday. DH is taking me out to aplaceinn Chagrin Falls OH, hat overlooks the falls, and is supposed to have good foor and a great ambiance.

Sorry it was such a frustrating day for you. Hope that's the worst of it and things move steadily upward for you.
Tonight for me is mustard & herb roasted chicken thighs, okra, and fresh tomatoes. No dessert for me, as I pigged out at lunch. Plenty of fruit around for everyone else.
