It is a Portuguese recipe for roasted pork. I marinated it for five days in water, kosher salt, bay leaves, red wine vinegar, red wine, balsamic vinegar, bay leaves, a lot of garlic, peppercorns and cumin. I roasted it up with carrots and potatoes.

Tonight, we are having Creole-spiced flounder with tomatoes & spinach, Parmesan risotto, garlic bread sticks and key lime pie for dessert.
Leftover broccoli and cheese/potatoes/carrot soup mid afternoon, so I think just a glass of sweetened black tea. I wish I had a slice of pumpkin pie and a cup of coffee. That sounds good.
manicotti pasta shells stuffed with butternut squash, spinach, and ricotta, and topped with marinara sauce, with a sprinkling of almond "Parmesan" on top. Made enough for two people for Sunday and Monday night.
going over to a friend's- she's making brisket with mushrooms/ YUM, I am bringing a salad (trying to decide what kind, probably a washed mix from Trader Joes, with fresh tomatoes from the garden, there are a few still clinging to life on the vine!)...
