Tonight's dinner is resting.

It is a Portuguese recipe for roasted pork. I marinated it for five days in water, kosher salt, bay leaves, red wine vinegar, red wine, balsamic vinegar, bay leaves, a lot of garlic, peppercorns and cumin. I roasted it up with carrots and potatoes.
My Blitzen boy is supervising.

Nah, he's not supervising - he's waiting for an earthquake or something to knock that roast on the floor and into his waiting jaws. LOL!

Lest over cabbage and potato soup. I baked some large soft pretzels to have on the side. Roasted beets and leeks.
