I have to tell ya....the Catfish was to die for! Hubbie fried it up with garlic and butter topped with salt and pepper and Italian seasoning. I made a little tarder sauce and it was so mild and good. I'd never had Catfish and was pleasantly suprised. Tonight is meatloaf, mashed potatoed and fresh zucchini that our neighbor also brought us.
I haven't had catfish like that since I lived in Florida. So, um, dating myself here, that was 16 years ago. We're doing the typical 4th of July stuff and grilling hamburgers and hotdogs. Happy 4th, everyone!
Happy 4th everyone. Its raining here so probably putting an end to our grilling today. But will have oven bbq chicken, corn, baked beans, deviled eggs, fruit cobbler. My youngest hates loud noises so we will be staying home tonight. Maybe next year we will get to see some fireworks.

Well, BF, his cousin and I (yes I went too ) took a drive to a place I had not been to yet and it's not even really that far from home. It was a Marina and it was really nice but they had one of those shacks by the water with country music and nice atmosphere, so we ended up eating there and had a couple of drinks. Then we went to this other place I had never been to either. A beach/marina/camping area, etc. We walked around and all in all it was actually a very nice day.
I want to go out later to one of the spots they'll be having fireworks shows but it is sooooo sooooo cloudy, foggy, muggy here that I think it might just pour and so we'll probably just stay home.
We ate chicken wings, cheeseburgers, fish & chips, conch fritters. I had a mojito...yummy... BF had beer....
It is just one of those recipes that I don't really measure BUT
I take a sleeve of Ritz crackers, crush them and line a casserole dish.
I take about 2 lbs sea scallops, cut them in half and lie them down in the cracker crumbs.
Then I melt a stick of butter, add a little pepper and paprika and lemon juice.
Crush up about another seeve and a half of Rita, add that to the butter mix and about 1/4 Merlot. (I know strange combo but it works good) .
Spread over the scallops and bake on 325 for about 30-35 minutes.
It is just one of those recipes that I don't really measure BUT
