Beef “tips” over rice and roasted asparagus. The recipe calls for tenderloin tips, but I used some stew meat from a local butcher and cooked it in the Instant Pot until tender. It’s very tasty and 1/4 the price of tenderloin!

last night I made meatloaf, homemade mashed potatoes with butter cream and chives, roasted asparagus. We had apple pie for dessert.

I am having steak and asparagus tonight.

It was a fasting day for me. From 6 pm last night. Wanted to make it to 6 pm tonight but it's getting close to 3:30 pm now and I'm starting to get hungry. Might not make it to six.

Edited to add a small avocado to this meal tonight. Found some really great ones that are about the size of a large apricot or medium lemon. Perfect for one meal. Added that to my dinner and now I'm happy and sated.

Took advantage of spiral sliced hams on sale for 77 cents/lb yesterday. I bought two even though it's just me and my husband usually. I baked one today and froze the other.

Dinner tonight was brown sugar glazed ham slices, spicy roasted sweet potato wedges and broccoli.

I see lots of ham sandwiches, ham used with eggs and veggies , maybe some dinner salads, and, of course, navy bean soup in the future.
