I haven't been on for a few days but I am feeling better now. Happy Belated Birthday karen_in_nh_2012 and a very Happy New Year to everyone! This year has got to be better than the last!
Tonight we are having curried chicken thighs over rice, black eyed peas, fried corn and pecan pie with whipped cream.
It's dreary and cold here ... daytime high of 21, overnight low expected to be ~9 -- our first night this season in single digits for overnight. (I guess I should be grateful we're not in the negative numbers yet!)
Time for comfort food, so I made salmon chowder. I pretty much winged it (is that an expression? it looks weird when I write it) -- I've recently made clam chowder and seafood chowder and both turned out great, so I figured I would just kind of eyeball ingredients and try to be logical (ha! ) about timing things. Crisp bacon (diced after cooking), diced onions & celery & carrots, sliced potatoes, clam juice (instead of chicken stock or broth, which is what a lot of online recipes use), thyme & pepper, a can of creamed corn (optional but I love corn so I added it), a slurry made from a bit of flour plus a quarter-cup of white cooking wine, half a cup of light cream (just because I didn't have any heavy cream -- Hannaford was completely out), and fresh salmon (well, previously frozen by me, but not canned or packaged) cut into small pieces (my pieces were ~.5" x 1", but smaller, about half an inch square, would have been even better) ... and about 40 minutes to this ...
I added a bit of salt and a few chili flakes at the table, and it was really delicious. VERY VERY thick and creamy, very chunky (you can probably tell those things from the picture) ... the salmon pieces were almost TOO large! So now I will go back and try to remember everything I added and how much and when so I can make it again.
