chicken breast stuffed with cranberry apple stuffing. I buy this at a local butcher who makes them fresh, he leaves the skin on. I season the skin and spread a little butter on top before baking. This feeds 4 people. But it's only 2 of us so we will have leftovers for lunch. roasted potatoes and a vegetable.
Tonight I made oxtails and beef neckbones (I didn't buy all oxtails due to the cost, but figured I wanted the oxtail bone marrow flavor mixed along with the beef neckbones, which were a fraction of the cost), Jamaican rice and beans, and potato salad. Cooked the oxtails and beef neckbones in the pressure cooker for an hour and fifteen minutes. They came out wonderfully.
I would love to have that dinner. I really enjoy oxtails but they are so expensive, I'm scared to buy them!
Tonight, I am making tacos with the leftover short ribs topped with an Asian slaw, Creole rice, Mexican street-style corn, and a pitcher of mango margaritas.
I made a big veggie and cheese omelet last night and we both ate from that. DH will again have something soft or via straw, I will have hard boiled eggs and beets, cause it sounds good.

Poblano peppers - one stuffed with a picadillo mixture and one stuffed with chicken, both smothered in ranchero sauce. I made Tex-Mex rice to go with it and I’ll cut up some avocado and tomato also.
