I had an unexpected day off so I decided to cook. I went shopping and picked up ancho, arbol and guajillo chilis and a beef roast. I am making birria tacos. The house smells wonderful right now!
Chicken breast boned, sauteed with lemon/butter/garlic sauce with pan warmed fresh garden tomatoes served over rice noodles. Trying to decide between fresh green beans or a small romaine salad. Cookie dough is ready to bake, will see if that happens.

Breakfast for dinner: biscuits with clotted cream and strawberry preserves, cheese grits, maple link sausages and bacon, scrambled eggs with peppers and onions, and mimosas.
Baked Eggplant Parm, made with broiled, herbed, panko sliced eggplant and light marinara basil sauce. Chopped Romain and butter lettuce salad with multi-color tomatoes and sliced cukes, red wine vinegar, and evoo dressing. Asiago garlic biscuits.
What a coincidence! I had baked eggplant too, with basil pesto,
