^^^ That looks really good, too! I just checked and Hannaford stocks some of their items. I think I will try the creme-brie-and-apple-stuffed chicken.

Tonight I had a packaged frozen meal too ... Margaritaville Key West Chili Citrus Shrimp (on sale at Hannaford a few weeks ago, I figured I'd try it) ...



Had it over some riced cauliflower with lots of veggies and a Seapak shrimp spring roll on the side ...



It was quite good but not spectacular, which is what I am going for with packaged foods (otherwise, I like my own cooking just fine!). The sauce was really good, though -- I love sweet chili sauce and may look up some recipes to combine it with citrus.

I cooked the whole box (says 1.5 servings, basically) but saved about 1/3 of it to have with my breakfast scramble tomorrow morning. It could be good with scrambled egg whites ... right?

Lots more manual labor today so I am tired ... looking forward to a productive week ahead -- I hope!

I like the looks of that veggie stir-fry :-)

The Barber Foods stuffed chicken is really quite nice - you have to be a little patient for a packaged food - they need to bake ~ 35 minutes, but the crust comes out a little crispy and the chicken is still moist and tender, plus of course they have the flavor interest of the stuffing. I have had them stuffed with cheese/broccoli, scallops and lobster, creme, brie and apple - all three winners in my book. Market Basket has them on sale fairly regularly and then they're a bargain.

Ordered Thai food takeout tonight:: chicken & beef satay, stir fried veggies, chicken Pad Thai, Thai style yellow curry with chicken & potatoes. Heineken Light beer to drink.
