Beans and rice with Andouille sausage is one of my favorite dinners to make , easy, quick and tastes very good :-). Sometimes I make it from scratch but on a work night I take a shortcut and use a package of dried beans and rice with spices from e.g. Goya or Vigo - still good!

I am wanting to try the beans and rice with Chorizo sausage or pork loin as variants...

It was a Hannaford special. It tasted VERY fresh -- I nuked it in its husk for about 5 minutes, then added some margarine and it was wonderful with the chicken.

A few months ago, I had followed the "advice" of some bloggers that said, "You can have 'fresh' corn on the cob year-round -- just freeze it, it freezes great!" No, it doesn't, or at least not for me. I won't even try that again as the texture was completely off and I ended up throwing out 2 good-sized items. And I HATE to waste food these days!

=====

Tonight, the 2nd serving of Campbell's chunky bean & ham soup (one of my favorites). I will add avocado and spinach to up the YUM factor, LOL!

I’m thinking of baked chicken breasts, stove top stuffing, gravy, cranberry sauce and peas. Mini thanksgiving.

We are just getting into the high season for produce at our latitude, and there is nothing like fresh strawberries, fresh tomatoes, fresh corn - fully ripened on the plant and then to your kitchen the same day or at worst the next day - it takes the produce to a completely different level!

I am planning to hit a local farm with a farm store this weekend to see what they have... maybe some pick-your-own action :-) I think we're just getting into harvest time for early tomatoes and strawberries...
