TACO THURSDAY for me, and the tacos were wonderful. (Then again, when have I ever had a BAD taco? ) I used the meat from 1 trimmed, skinless chicken thigh (which was about 3 ounces) plus a bit of cheese, diced onions, lettuce, tomato, a tiny bit of lite sour cream, and maybe 1/8 avocado total (for all 4 mini tacos).

I tried Mission's Net Zero street taco flour tortillas (in other words, TINY TACO TORTILLAS -- they are about 5" across, as you can see in the photo, which is a regular 10.5" Fiesta dinner plate) and they were great -- to me, they taste EXACTLY like their regular flour tortillas so I don't know how they do it, but I'm glad they do! (Just 25 calories each, zero net carbs because of the fiber although I don't worry about carbs too much since mine are usually about 90% from veggies.) I ended up having 4 tiny tacos and they were very yummy.



^^^ The first 2! Two more afterward ... but I didn't take another picture because it would be basically identical! I took the photo before I added the lettuce because that always covers up everything else, LOL!

Tomorrow morning I'm going to try a Mission net zero tomato-basil tortilla with an egg and veggies for breakfast (usually I have an egg white scramble with lots of veggies). I bet it will taste great too.

Hubby picked up the pizza for Friday. We decided to celebrate Cnco de Mayo a day early.

I had 2 regular tacos and 2 of the Bold. A small glass of Sangria and now just drinking water. I’m totally stuffed now.
