I finally finished off the last of the pot roast. Brown rice on the side, of course.
Kale, broccoli and mango salad.

tonight we are celebrating our 59th anniversary although it isn't until next week. We are going to our new, upscale restaurant here in town that over looks the lake. We have been there for a reception and brunch but never for dinner. It is kinda exciting because we will be the first of our friends to try it for dinner. A lot have gone for cocktails and appetizers or brunch, but not dinner.

Going to a local diner with my DH and his family. I am thinking breakfast for dinner but I also remember enjoying fried flounder and French fries as a kid at the diner too. Still undecided.

It feels like autumn outside. So that got me thinking...

Tonight 2 roasted chickens flavored with butter,salt,black pepper,stuffed with onion,apple and parsley and beer poured over them. Served with garlic mashed potatoes,Brussels sprouts and green beans with buttered bread crumbs and almonds. To drink beer or Radlermass. For dessert vanilla pudding with plum compote.

Last night's dinner was homemade white chili made with ground turkey, garbanzos and canned green chiles. I also added a couple of green tomatoes, along with onions, garlic, green pepper and chopped celery. Spices were New Mexico chile powder, dried oregano, salt and pepper. I topped the chili with fresh chopped cilantro, a squiggle of hot sauce and a little grated cheese. It was delish.

I will make this again.

I was surprised at how well the green tomatoes worked, flavor wise.

I also added the kernels of a leftover ear of corn.

Last night was something new. The local organic market (Luckys) was selling individual servings of fish, frozen, with a sauce of some kind. Love the Wild, is the brand.

We tried Red Trout with Salsa Verde. The fish was lovely, and it came with the sauce and parchment paper for papillote. I will definitely try some other varieties. Scalloped potatoes too.

Tonight is chicken tiki masala with basmati rice and steamed summer squash.

Almrausch, isn't this weather lovely? It was finally cool enough for a morning hike!

Making beef and pork meatballs and a marinara sauce. Spinach & kale salad and French bread, a huge treat, because we never have bread with meals. Hopefully, I can restrain myself.
