Oh thank you all-the worst is yet to come as he's doesn't adapt to change very well.
Wow, Lacey!! So sorry you and your husband are going through so much!!!!! Change is tough. I had to do some due to overuse of aspirin. Prevacid and diet modification. Doing much better, but still eating some things I shouldn't!!
Tonight:
Sourdough grilled cheese sandwiches and homemade beef stew (yep, last of it finally!)
Did someone say carbs? Well carbs it is. Having another ham and pineapple pizza. Wife made an extra crust last week and now is the time for the benefit of advanced preparation. It's going to be our coldest night in a long time so I expect there will be some baking going on tonight to warm the house. Expecting it to chill down to a low around 43 or lower maybe.
Yeppers! its already dropping down to the low 20's here some nights and the bird bath freezes solid....I watched a blue jay trying to crack it to get a drink.....no luck. Today was warmer but still was about 33 degrees this morning....and now it is a wet cold evening. We are going out to a Candidates Night in a little while.....I put on a sweater....first time I have worn a wool sweater in more than 5 years. It is the only one I took to Ca with me......
That's break out the heavy coats here. Starting Saturday it's back to the grind. 80's by day 60's by night. We will cook chili and stew the next couple of days before going back to the normal. We are just now getting to our prime time for grilling out doors. I stocked up on chicken leg quarters today at 59¢ a pound. Those will be grilled Thursday. I did go out the door this morning with just the long sleeve shirt and after two steps I came back inside and put my light jacket on. Wind was rather brisk and went through me in an instant. I still like the freshness of the chill.

6 skinless, boneless chicken breast halves
1/3 cup cornmeal
2 tbl spoons taco seasoningmix
1 egg
1 4 oz. can whole green chilie peppers, rinsed, seeded, cut in half lengthwise (6 pieces total)
2 oz. Monterey Jack cheese cut into six 2x1/2 inch sticks
2 tbl spoons chopped cilantro
1/4 teaspoon black pepper
1/4 teaspoon red pepper
1 8 oz. jar taco sauce or salsa
1/2 cup shredded Monterey Jack cheese (optional)

Pound chicken breast lightly. You want to form a sort of rectangle about 1/8 inch thick. In a bowl combine taco seasoning and corn meal. Place egg in another bowl; beat lightly. For each roll place a chilie pepper half on a chicken piece. Place cheese stick atop the chilie pepper near an edge. Sprinkle with cilantro, black and red peppers. Fold in sides and roll up jelly roll style. Dipe rolls in egg and the into cornmeal mixture. Place rolls seam side down in a shollow baking pan. Bake uncoveed in a 375' oven for 25-30 min. Heat taco sauce. Put that shredded cheese on chicken when ready to serve. Serve with the warm taco sauce.
In a medium mixing bowl combine egg, bread crumbs, onion, milk, thyme rosemary, garlic salt, and pepper. Add turkey; mix well. On waxed paper pat turkey mixtureinto a 12x8-inch rectangle; set aside.

For vegetable stuffing, in a saucepn cook broccoli, carrots, and sweet pepper, covered, in a small amount of boiling water for 3 to 4 minutes or till crisp-tender. Drain well. Stir in Parmesan cheese.

Spread vegetable stuffing over turkey mixture to within 1 inch of sides. Beginning at a short end, roll turkey tightly using waxed paper to lift mixture. Peel waxed paper away as you roll. Place in a 9x5x3-inch loaf pan.

Bake in a 350 degree oven for 1 to 1-1/4 hours or till no longer pink (meat thermometer registers 180 degrees). Transfer to a serving platter; brush with melted jelly.
