Observation: Observed employees on registers putting on gloves to handle food without washing and employees coming from the back to the line without changing gloves or washing hands.
Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

Observation: Observed a couple gaskets on the line and under the coffee station that are torn.
Correction: Have torn gaskets replaced.

Observation: Observed the walk-in refrigerators and freezers in need of cleaning (under shelves too) and several gaskets in need of cleaning (the walk-ins and on the line).
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: Observed grout in the floor starting to wear away (mainly by the dish machine).
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Observation: Observed the floor throughout the kitchen in need of cleaning (be sure to get under and behind equipment).
Correction: Clean floors thoroughly.

Cream cheese refrigerator not working properly. Area of floor on prep line missing grout. Make sure thermometers are put in new refrigeration units.

Observation: Cream Cheese at 50 degrees, refrigerator not working properly.
Correction: Move cream cheese to another refrigerator to cool down rapidly. Turn down temperature in unit and call maintenance if turning it down does not help.

Observation: Sliced turkey was thawed using warm water and was between 45-50 degrees in walk in cooler.
Correction: PIC discarded turkey. Make sure appropriate methods for thawing foods are used.

Observation: The thermometers in the barista cooler and the cream cheese cooler are broken.
Correction: Replace broken thermometers, so that ambient temperature can be identified easily.
