    Observation: Observed cooked black beans dated 3/22, cooked potatoes dated 3/15,cooked onions dated 3/24 and sliced turkey dated 3/19 in the prep and walk-in cooler.
    Correction: Discarded by management. Any cooked vegetable or sliced meat must be discarded 7 days after cooking or slicing. The first day is the day that the product is cooked or sliced which give an additional 6 days.

    Observation: Observed numerous roaches in and around a box that was stored on the floor under the drink syrup shelves.

    Observation: Observed the sanitizer strength at >400 ppm for Quat. Employee does not measure the amount but pour directly into the sink. Employee did not check the strength with the test strips.
