    Observation: Observed sliced tomatoes, onions, lettuce, for which time rather than temperature is being used as a control was not cooked, served or discarded by the expiration time as indicated on the package. EHS observed sliced tomatoes, onions, sliced cheese and lettuce on the sandwich prep table that had a discard time of 2:37PM and the time was 3:37PM. Temperature of the tomatoes was 56 degrees F. Manager discarded items.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control.

    Correction: Employee was immediately instructed to remove gloves and wash hands. Hands must be washed between handling raw meat and ready to eat foods.

    Observation: Observed grease on the floor from the container used to butter buns. Also, standing water and/or syrup were on the bottom shelf and floor in the drive thru area.
    Correction: Clean.

    Observation: Observed the raw chicken and precooked burgers at 50°F in the walk-in cooler. Thermometer in the cooler was reading 48°F.
    Correction: Product was pulled and put into properly operation refrigeration. Repairman had been called. Temperature was checked in the early AM and was good.

    Observation: Found food contact surfaces were not clean - edges of pans and hot dog warm up pan.
    Correction: Food surfaces are to be clean and sanitized. Please clean and sanitize pots and pans.

    Correction: Cold hold to be 41 degrees or less. Product was transferred to another unit (2 hours).
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: Faucet was not able to sustain 20 second run time.
    Correction: Actual run time was 6-8 seconds. Please adjust run time to at least 20 seconds in men's restroom.

Gloves worn. Discussed condition of interior of walk-in refrigeration unit which has an accumulation of ice on the floor wall adjoining the freezer. Wall may be damaged from ice. Three compartment sink - Quat sanitizer - 200+ ppm.

    Observation: Found employees leaving food prep area and return, putting on gloves and had not washed their hands.
    Correction: All employees are to wash hands upon entering food prep area where ready to eat food is made before putting on gloves. (Employees were noted washing hands correctly).

Food was over cooked. Care free management. Always dirty tables n floors. 15 minute wait time for order. I have went there for 20+years n will never go back.
