Observation: Observed the cutting board on the prep unit was heavily scored and discolored.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

Observation: Observed the floor in the walk-in freezer and the doors of the prep unit in need of cleaning.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Correction: Replace or resurface the cutting boards so that they can be easily cleaned.

Observation: Bleach in 3 compartment sink was > 200ppm
Correction: Make sure the bleach concentration is at an appropriate level (50-100ppm). Drain out most of sink and add more water to correct it.

Observation: Mold accumulating in the ice machine.
Correction: Empty out ice machine in order to clean and sanitize it properly. This should be done about every other week or so.
