    Correction: Clean nonfood contact areas as often as necessary.

    Observation: Blender jars are rinsed between uses but are only sanitized at the end of the day (> every 4 hours).
    Correction: Containers and utensils used with TCS food must be cleaned and sanitized at least every four hours.

    Observation: Interior of ice bin is not clean. Found some ice cubes with black specs in them.
    Correction: Clean ice bin as often as necessary to prevent mold growth. Discard ice that has black specs in it.

Follow up to check dishmachine. Machine is being used to wash and rinse. Sanitizing is done with Quaternary ammonia in 3 sink. Contact inspector when unit is repaired.

Follow up to check dishmachine. Sanitizer pump was replaced. Checked machine - ran 3 cycles - no chlorine would show on test strip (less than 10 ppm). Do not use machine until machine can show chlorine level on test strip. Call inspector after repair to recheck. Use 3 compartment sink to sanitize.

Rechecked dishmachine. Manufacturer was in facility on 5/3/14 - had to order a part - part is due 5/6 or 5/7 and will be installed upon delivery. Machine may be used for washing but all items must be sanitized in chemical sanitizer in 3 compartment sink.

    Observation: Observed dishmachine would not turn test tape to indicate adequate concentration of chlorine. Less than 10 ppm concentration showing on tape.
    Correction: Correct by washing, rinsing and sanitizing in 3 compartment sink. Contact maintenance to check and adjust dishmachine.

    Observation: Observed sanitizer solution in dishmachine was less than 10 ppm and not visible on test kit.
    Correction: Correct by changing sanitizer container. Set up 3 compartment sink until machine will read correct concentration on test kit. (Machine was pumping sanitizer before end of inspection)

    Observation: Observed no towels at handsink in rear room.
    Correction: Correct by providing towels.
