    Correction: Supply brighter lighting (at least 10 foot candles of lighting).

Note: When thawing any fish inside vacuum sealed bags you must slit bag or remove fish from bag. This is due to greater risk of Clostridium botulinum. Pico was found at 57 F at 10:00 AM . It had been prepped at 8:30 AM. This is to cool to 41 F within 4 hours. Manager to review process. Also, manager to ensure sliced deli meat is cooled to 41 F after slicing, portioning and bulk bagging within 4 hours.

    Observation: Chicken salad in 3 door Delfield at 46.9 F. Water testing bottle found at 44 F.
    Correction: PIC relocated food. Serviceman to check.

Drain under 3 compartment has been cleaned. Garbage disposal drain has been cleaned. Floor drain in corner has been cleaned. Faucet has been ordered for spray hose. New check valve has been installed. Permit issued.

I will follow up tomorrow on plumbing in order to issue permit. 162 degrees wash/185 degrees rinse.
  • Cooling Methods (corrected on site)
    Observation: 1. Chicken breasts prepared at 6:14 am were found in covered pan at 46 degrees. These were trying to be cooled. Procedures in house are to place on flat pans but this was not followed today. 2. Chicken salad was made at 7:06 am and covered. This must cool to 41 degrees in 4 hours.
    Correction: 1. Chicken was rolled into freezer. 2. This was placed in freezer. Review cooling procedures with staff.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Concrete blocks under ice machine are not cleanable.
    Correction: Seal.
  • Warewashing Equipment, Cleaning Frequency
    Observation: Dishmachine nozzles have debris hanging from them.
    Correction: Clean.
  • Plumbing System Maintained in Good Repair
    Observation: 1. Drain from dish disposal at 3 compartment is stopped up. Drain under 3 compartment sink is clogged. Water standing on top of drain. 2. No faucet handle on hot water at spray sink. 3. Check valve dripping at 3 compartment sink.
    Correction: 1. Correct plumbing issues. 2. Repair. 3. Repair.
  • Physical Facilities in Good Repair
    Observation: Floor in walk-in refrigerator is in poor repair. Concrete broken.
    Correction: Repair.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Mildew on wall in dishroom. Floor drain in corner of cook line is soiled.
    Correction: Clean.
