Note: When thawing any fish inside vacuum sealed bags you must slit bag or remove fish from bag. This is due to greater risk of Clostridium botulinum. Pico was found at 57 F at 10:00 AM . It had been prepped at 8:30 AM. This is to cool to 41 F within 4 hours. Manager to review process. Also, manager to ensure sliced deli meat is cooled to 41 F after slicing, portioning and bulk bagging within 4 hours.

Observation: Chicken salad in 3 door Delfield at 46.9 F. Water testing bottle found at 44 F.

Observation: 1. Chicken breasts prepared at 6:14 am were found in covered pan at 46 degrees. These were trying to be cooled. Procedures in house are to place on flat pans but this was not followed today. 2. Chicken salad was made at 7:06 am and covered. This must cool to 41 degrees in 4 hours.
Correction: 1. Chicken was rolled into freezer. 2. This was placed in freezer. Review cooling procedures with staff.
