Be sure workers time food being time controlled. A few sandwiches were untimed but had just been done. Provide a scoop with a handles to dispense sugar. It is important that manager on duty check temps of units at beginning of their shift. Permit issued.

Other observations: Grease trap is leaking. It appears uneven and connection is leaking. Wash temperature of bar dishmachine appears lower than data plate recommends. 120 F is recommended and the gauge read 84 F.

Correction: I recommend placing these items in make table so product is not abused. Management agreed and relocated food.

Other observations: New dishmachine has been installed. Only 50 ppm is required. Unit was sanitizing at 200 ppm. Inquire about alarm. Hot water was shut off due to a plumbing issue. Repair.

Observation: No date found on sliced tomatoes, cooked rice.
Correction: PIC placed appropriate date on tomatoes and rice was discarded. Foods were prepared in commissary. Ensure dates are placed on product before or after delivery to Vito's.
