Shake spindles were dirty. Have a system for cleaning a sanitizing. All workers to be aware of system. I recommend cleaning and sanitizing at least every 2 hours. Logs for refrigeration units were not consistently kept therefore this increased temperature was not caught by staff. Better monitoring needed. Note: do not store food or food equipment under soap dispenser or towel dispenser. These areas are sources of contamination. 50 ppm dishwash, 300 ppm 3 compartment.
