Ensure employees receive food safety training if they are responsible for new tasks. Discussed keeping food thermometers on the line and checking periodically, as time is not always reliable to achieve proper cooking temperatures.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site) (repeated violation)
    Observation: Observed an employee using his bare hand to reach into container of cheese. Employee realized he should be using gloves, so he tossed cheese in the trash and put gloves on before getting another handful of cheese.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • Critical: Temperature, Cooking - Raw Animal Foods* (corrected on site)
    Observation: Temperature of fish was 128°F when taken off the grill to be served.
    Correction: Fish was put back on grill and temp was 155 when checked the second time. Fish should be cooked at 145°F or above for 15 seconds.

    Correction: Employees to use hand protection when handling ready to eat foods. Please instruct employees to wear hand protection for ready to eat foods (muffins were voluntarily discarded).

    Observation: Found towels in sanitizer buckets that had no sanitizer in solution.
    Correction: Towels to be in chemical (chlorine) sanitizer. Please store towels in sanitizer. New solution was made.

    Observation: Found no test kit for chlorine sanitizer.
    Correction: Test kit necessary for chemical sanitizer. Please provide test kit.

    Observation: Found top of mixer screen and lip edge of soup pots not clean.

    Observation: Chicken breast were found at temperatures from 41-50 degrees in the low boy refrigeration unit. The chicken had been in the drawer since set-up in the morning. The gasket was in bad shape which allow hot air into the drawer.
    Correction: Product was discarded by manager. Gasket will be replaced.
